Easy Breakfast Tacos with Fresh Summer Veggies
Ingredients
- 3 eggs
- 1 avocado
- 1 Roma tomato
- 1 jalapeño
- 1 bulb of green onions
- 1/2 cup shredded sharp cheddar
- 4 wraps (wheat/corn/coconut or almond flour)
Preparation
Heat the tortillas.
Chop all vegetables and shred the cheese.
Whisk the eggs and soft scramble them over high heat for 2 minutes.
Assemble the tacos and serve.
Use fresh summer vegetables for best flavor; no salsa is needed.
