Fluffy Sweet Potato Paleo Pancakes

Ingredients

  • 1/3 cup mashed baked sweet potato
  • 1/2 mashed ripe banana
  • 1/2 cup cassava flour
  • 2 tbsp olive oil
  • 2 eggs (vegan sub for flax eggs)
  • 1 tsp baking soda
  • 2 tsp pumpkin pie spice

Preparation

  1. Mash the sweet potato and banana if not already mashed

  2. In a bowl, combine all ingredients to form a smooth batter

  3. Heat a skillet or griddle over medium heat and lightly grease with oil

  4. Scoop batter onto the hot surface and cook until bubbles appear on top, then flip and cook until golden brown

  5. Remove from heat and serve as desired, such as for toasts or tacos
