Garlicky Wild Mushrooms on Toast

Ingredients

  • 2 tbsp extra virgin olive
  • 2 cloves garlic sliced
  • 3 big handfuls wild mushrooms broken up a bit
  • 1 tbsp white wine - optional
  • Big pinch sea salt
  • Black pepper
  • 1 tbsp fresh thyme leaves
  • 2-3 slices sourdough toasted
  • Drizzle extra virgin olive oil

Preparation

  1. In a pan, on a low to medium heat - fry the garlic with the oil for a minute or so

  2. Add in the mushrooms and white wine. Stir to combine and sauté for 3-4 minutes until the mushrooms have softened

  3. Season with salt, pepper and fresh thyme

  4. Drizzle some extra virgin olive oil over toasted sourdough

  5. Spoon the mushrooms on top
