Gluten-Free Vegan Strawberry Crumble Bars

Ingredients

Crust

  • 2 cups gluten free rolled oats
  • 1 cup almond flour
  • 1 cup gluten free oat flour
  • 1/2 cup maple syrup or honey
  • 2 teaspoons baking powder
  • 1/4 cup almond milk or any milk substitute
  • 1/2 cup unsweetened applesauce

Strawberry filling

  • 3 cups chopped strawberries fresh or frozen
  • 2 tablespoons chia seeds
  • 1 tablespoon water

Preparation

  1. Chop up strawberries then heat along with the water and chia seeds at a simmer for 10 minutes to make the filling.

  2. Preheat oven to 350F.

  3. In a bowl, mix all of the crust ingredients together well with a spatula.

  4. Line an 8x8 pan with parchment paper and add two-thirds of the crust mixture, saving one-third for later.

  5. Add the strawberry layer after letting it cool for at least 5 minutes.

  6. Add the remaining crust on top, sprinkling it on.

  7. Bake for 40 to 43 minutes.

  8. Let cool completely before removing from the pan and slicing.

Notes

  1. Store in the fridge for 4 to 5 days.

  2. Makes 9 bars.
