Layered Mermaid Chia Pudding Bowl
Ingredients
- 2 cups organic unsweetened almond milk (or 1 cup coconut milk & 1 cup almond milk)
- 2 tbs maple syrup
- Pinch of Himalayan salt
- 2 scoops of collagen powder
- 1/2 cup prebiotic chia seeds
- 1 tsp pink dragon fruit powder
- 1 tsp black goji powder
Preparation
In a bowl, combine the organic unsweetened almond milk, maple syrup, pinch of Himalayan salt, and collagen powder. Mix well until fully combined.
Add the prebiotic chia seeds to the mixture and stir thoroughly. Allow the mixture to sit for about 15 minutes, stirring occasionally, until it thickens.
Divide the chia pudding mixture into two separate portions.
In one portion, add the pink dragon fruit powder and mix until the color is evenly distributed, creating a bright pink layer.
In the other portion, add the black goji powder and mix well to create a black carrot chia layer.
In serving bowls, layer the pink dragon fruit chia pudding and the black carrot chia pudding to create a visually appealing effect.
Finish with any desired toppings such as fresh fruits, coconut flakes, or nuts.
