Layered Ombre Chia Pudding

Ingredients

  • 2 cups organic unsweetened almond milk (or 1 cup coconut milk and 1 cup almond milk)
  • 2 tablespoons maple syrup
  • Pinch of Himalayan salt
  • 2 scoops of hemp protein powder or collagen
  • 1/2 cup prebiotic chia seeds

Layer additions

  • 1 teaspoon beetroot powder
  • 1 teaspoon dragon fruit powder and blue butterfly pea flower powder

Toppings

  • Wild blueberries, to taste
  • Coconut flakes, to taste

Preparation

  1. In a blender, combine the almond milk, maple syrup, salt, and optional protein powder or collagen and blend until combined.

  2. Add the chia seeds and pulse them in, pulsing briefly every 1-2 minutes until the pudding starts to thicken and the seeds remain evenly distributed. Add the superfood powders separately, one at a time.

  3. Transfer the mixture to a jar and refrigerate overnight or for at least 4 hours.

  4. Serve with wild blueberries and coconut flakes on top.
