Marble Chia Pudding with Superfood Layers

Ingredients

  • 2 cups organic unsweetened almond milk (or 1 cup coconut milk and 1 cup almond milk)
  • 2 tablespoons maple syrup
  • Pinch of Himalayan salt
  • 2 scoops hemp protein powder or collagen
  • 1/2 cup prebiotic chia seeds
  • 1 teaspoon beetroot powder for pink layer
  • 1 teaspoon dragon fruit powder and blue butterfly pea flower powder for purple layer

Preparation

  1. In a blender, combine the almond milk, maple syrup, salt, and optional protein powder or collagen and blend until combined.

  2. Add the chia seeds and pulse them in, pulsing briefly every 1-2 minutes until the pudding starts to thicken and the seeds are evenly distributed, usually 3-4 pulses.

  3. Add the superfood powders separately, one at a time.

  4. Transfer the mixture to a jar and refrigerate overnight or for at least 4 hours.

  5. Serve with your favorite toppings.
