Pink Chia Seed Parfait

Ingredients

  • 1/4 cup chia seeds
  • 1 cup plant-based milk
  • 1 tablespoon maple syrup
  • 1 teaspoon pink pitaya powder
  • optional: 3 tablespoons greek yogurt
  • plant-based yoghurt of choice
  • granola
  • pomegranate seeds
  • banana coins

Preparation

  1. Combine chia seeds, plant-based milk, maple syrup, pink pitaya powder, and optional greek yogurt, then let sit in the fridge overnight or for at least 6 hours to make the chia pudding.

  2. Layer the ingredients in a jar.

  3. Top with additional pomegranate seeds, granola, and banana coins, then enjoy.
