Pink Chia Seed Parfait
Ingredients
- 1/4 cup chia seeds
- 1 cup plant-based milk
- 1 tablespoon maple syrup
- 1 teaspoon pink pitaya powder
- optional: 3 tablespoons greek yogurt
- plant-based yoghurt of choice
- granola
- pomegranate seeds
- banana coins
Preparation
Combine chia seeds, plant-based milk, maple syrup, pink pitaya powder, and optional greek yogurt, then let sit in the fridge overnight or for at least 6 hours to make the chia pudding.
Layer the ingredients in a jar.
Top with additional pomegranate seeds, granola, and banana coins, then enjoy.
