PB&J Stuffed French Toast

Ingredients

  • 2 slices of sourdough (or any bread!)
  • Peanut butter
  • 1 egg
  • 1/2 cup milk of choice (I used almond milk)
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla

Strawberry jam

  • 1 cup chopped strawberries
  • 1 tbsp chia seeds

Preparation

  1. In a shallow bowl big enough to fit your bread in, whisk the egg then add in milk, cinnamon, and vanilla and whisk together. Option to add a little sugar here if you want a sweeter breakfast.

  2. Soak the bread in the mixture, coating both sides.

  3. Heat a skillet over medium heat, add some butter or coconut oil, then add your bread in. Cook for 3-4 minutes, flip, cook 3-4 more. Remove.

Jam making

  1. Heat a saucepan over medium heat and add the strawberries and chia seeds. Mix together and let simmer for 10 minutes.

Assembly

  1. Add peanut butter on one side of the bread then add the strawberry jam on the other.

  2. Combine into a sandwich and slice in half.

  3. Eat it either on its own or top with a little honey or maple syrup. Enjoy.
