Pesto and Roasted Tomato Sandwich
Ingredients
Pesto
- 1/2 cup basil leaves
- 4-5 cloves garlic
- Olive oil
- 1/4 teaspoon salt and pepper
- 5-8 cashews
- 1 cube processed cheese
Roasted tomato
- 1/2 cup cherry tomatoes
- 1 stem thyme
- 3-4 cloves garlic
- Salt and pepper
- Olive oil
Assembly
- Cream cheese
- Balsamic vinegar
- Bread
Preparation
Make the pesto by blending basil leaves, garlic, cashews, processed cheese, olive oil, salt, and pepper until smooth.
Prepare the roasted tomatoes by tossing cherry tomatoes, thyme, garlic, salt, pepper, and olive oil together, then bake at 180°C for 10-15 minutes.
Assemble the sandwich by spreading cream cheese on bread slices, adding the roasted tomatoes, drizzling with balsamic vinegar, and topping with the pesto mixture.
