Plant-based Waffles Topped with Fruit

Ingredients

  • 2 T peanut butter protein powder by @happywayau
  • 1 1/2 C Spelt flour
  • 1 Tbls flaxmeal
  • 1 T baking powder
  • 1 Tsp ground cinnamon
  • 1 Tbls pure maple syrup
  • 1 Tsp pure vanilla powder
  • 1/4 cup apple sauce
  • 1 1/2 C Almond milk or any milk

Preparation

  1. Mix the flaxmeal with 2-3 tablespoons of water in a small bowl to create a flax egg and let it sit for 5 minutes to thicken

  2. In a large bowl, whisk together the dry ingredients: spelt flour, baking powder, ground cinnamon, peanut butter protein powder, and pure vanilla powder

  3. In another bowl, combine the wet ingredients: pure maple syrup, apple sauce, and almond milk

  4. Add the flax egg to the wet ingredients and stir well to combine

  5. Pour the wet mixture into the dry ingredients and mix until just combined, avoiding overmixing

  6. Preheat the waffle iron according to the manufacturer's instructions

  7. Pour the batter onto the preheated waffle iron and cook until golden brown and crisp

  8. Serve the waffles topped with fresh fruit
