Potato Hash Pancake with Marinara Sauce

Ingredients

  • 4 packed cups shredded raw potato
  • 1/2 tablespoon salt
  • 2 1/2 tablespoons canola oil or neutral oil

Marinara sauce

  • 1 can (400g) diced tomatoes
  • 3 tablespoons tomato paste
  • 2 tablespoons coco sugar or sugar of choice
  • 1 teaspoon salt, or to taste
  • 1 teaspoon dried basil
  • 2 tablespoons olive oil

Preparation

  1. Shred the potatoes if not already shredded.

  2. Mix the shredded potatoes with salt.

  3. Heat the oil in a large pan over medium heat.

  4. Form the mixture into patties and fry until golden brown on both sides.

  5. For the marinara sauce, blend all sauce ingredients in a blender or food processor until smooth.

Tips

  1. Make smaller cakes or different shapes as desired.

  2. Adjust the sauce sweetness and salt to taste.
