Pumpkin Pecan Pancakes

Ingredients

  • 1 1/2 cups rolled oats
  • 1/2 cup toasted pecans
  • 1/2 cup pumpkin purée
  • 3/4 cup almond milk
  • 2 tbsp maple syrup
  • 1 tsp vanilla
  • 2 tsps pumpkin pie spice
  • 1 tbsp baking powder
  • 1/4 tsp salt

Preparation

  1. Blend the oats and pecans to fine flour

  2. Whisk everything together in a bowl

  3. Cook over low heat using about 1/4 cup batter per pancake until golden on both sides and fluffy (makes about 6)

  4. Top with maple syrup and chopped pecans

  5. Eat
