Pumpkin Pecan Pancakes
Ingredients
- 1 1/2 cups rolled oats
- 1/2 cup toasted pecans
- 1/2 cup pumpkin purée
- 3/4 cup almond milk
- 2 tbsp maple syrup
- 1 tsp vanilla
- 2 tsps pumpkin pie spice
- 1 tbsp baking powder
- 1/4 tsp salt
Preparation
Blend the oats and pecans to fine flour
Whisk everything together in a bowl
Cook over low heat using about 1/4 cup batter per pancake until golden on both sides and fluffy (makes about 6)
Top with maple syrup and chopped pecans
Eat
