Pumpkin Oats with Caramelized Bananas

Ingredients

  • 1/3 cup rolled oats
  • 2 tbsp pumpkin purée
  • 1/2 tsp pumpkin pie spice
  • 1-2 tsp brown sugar
  • Pinch of salt
  • 1 cup almond milk

Banana topping

  • Bananas
  • Maple syrup
  • Pinch of salt
  • 1 tsp vegan butter (optional)

Preparation

  1. Add all ingredients to a saucepan and bring to a low simmer.

  2. Allow to cook and thicken for 3-5 minutes.

  3. Remove from heat, stir well, and serve topped with nut butter and other toppings.

Banana cooking

  1. Slice bananas into coins.

  2. Place on a non-stick pan with a drizzle of maple syrup and a pinch of salt.

  3. Cook until brown on both sides.

  4. For extra caramel flavor, add 1 tsp vegan butter and cook to brown the edges.
