Quick 15-Minute Cherry Muffins

Ingredients

  • 125 g softened butter
  • 120 g sugar
  • 1 packet vanilla sugar
  • 2 eggs
  • 200 g sour cream
  • 250 g all-purpose flour
  • 2 tsp baking powder
  • 1 jar canned cherries, drained weight 350g
  • 6 tbsp milk
  • powdered sugar, for dusting

Preparation

  1. Cream softened butter with sugar and vanilla sugar

  2. Gradually mix in eggs and sour cream

  3. Mix flour and baking powder in a bowl

  4. Alternately add the flour mixture and milk to the batter, mixing until combined

  5. Preheat oven to 180°C (conventional) or 160°C (convection)

  6. Line a 12-cup muffin tin with paper liners

  7. Divide the batter among the muffin cups

  8. Drain the canned cherries and let them sit to remove excess liquid

  9. Press 4-5 cherries into the top of each muffin cup

  10. Bake for about 25 minutes

  11. Let the muffins cool

  12. Dust with powdered sugar before serving, if desired
