Quick 15-Minute Cherry Muffins
Ingredients
- 125 g softened butter
- 120 g sugar
- 1 packet vanilla sugar
- 2 eggs
- 200 g sour cream
- 250 g all-purpose flour
- 2 tsp baking powder
- 1 jar canned cherries, drained weight 350g
- 6 tbsp milk
- powdered sugar, for dusting
Preparation
Cream softened butter with sugar and vanilla sugar
Gradually mix in eggs and sour cream
Mix flour and baking powder in a bowl
Alternately add the flour mixture and milk to the batter, mixing until combined
Preheat oven to 180°C (conventional) or 160°C (convection)
Line a 12-cup muffin tin with paper liners
Divide the batter among the muffin cups
Drain the canned cherries and let them sit to remove excess liquid
Press 4-5 cherries into the top of each muffin cup
Bake for about 25 minutes
Let the muffins cool
Dust with powdered sugar before serving, if desired
