Samoa Baked Oatmeal Bars
Ingredients
- 2 overripe bananas, mashed
- 1/3 cup almond butter
- 1 flax egg
- 2 tablespoons almond milk
- 1 teaspoon vanilla extract
- 1 cup oat flour
- 1 cup rolled oats
- 1 teaspoon baking powder
- 2 tablespoons maca powder (optional)
- 1/2 cup shredded coconut
- 1/2 cup chocolate chips
Preparation
Preheat oven to 350F and grease or line an 8×8 baking pan with parchment paper.
For the flax egg, combine 1 tablespoon ground flaxseed with 2.5 teaspoons water. Set aside for 5 minutes to gel.
In a medium bowl, combine oat flour, rolled oats, baking powder, and maca powder.
In a separate bowl, combine all wet ingredients including the flax egg.
Add the dry ingredients to the wet ingredients and stir until combined.
Fold in the shredded coconut and chocolate chips.
Pour the mixture into the prepared baking pan and top with additional coconut and chocolate chips.
Bake for 20-25 minutes. Let cool in the pan for 10 minutes, then transfer to a cooling rack to cool completely. Slice into bars and enjoy.
