Samoa Baked Oatmeal Bars

Ingredients

  • 2 mashed overripe bananas
  • 1/3 cup almond butter
  • 1 flax egg
  • 2 tablespoons almond milk
  • 1 teaspoon vanilla extract
  • 1 cup oat flour
  • 1 cup rolled oats
  • 1 teaspoon baking powder
  • 2 tablespoons maca powder (optional)
  • 1/2 cup shredded coconut
  • 1/2 cup chocolate chips

Preparation

  1. Preheat oven to 350F and grease or line an 8x8 baking pan with parchment paper.

  2. For flax egg, combine 1 tablespoon ground flaxseed with 2.5 teaspoons water and set aside for 5 minutes to gel.

  3. In a medium bowl, combine oat flour, oats, baking powder and maca powder.

  4. In a separate bowl, combine all wet ingredients including flax egg.

  5. Add dry ingredients to wet and stir until combined.

  6. Fold in coconut and chocolate chips.

  7. Pour into prepared baking pan and top with additional coconut and chocolate chips.

  8. Bake for 20-25 minutes, let cool in pan for 10 minutes, then transfer to a cooling rack to cool completely, and slice into bars to enjoy.
