Homemade Vegan Banana Bread

Ingredients

Wet

  • 3 medium overripe bananas
  • 1/4 cup maple syrup (or to taste)
  • 1 tbsp vanilla extract
  • 1 tsp apple cider vinegar
  • 3 tbsp avocado oil
  • 3 tbsp almond butter
  • 2 eggs or 2 flax eggs

Dry

  • 1 1/2 cups chickpea flour
  • 1 tsp baking soda
  • 1 tsp cinnamon powder
  • 1 tsp cardamom powder

Optional add-ins

  • 1/2 cup fresh blueberries
  • 1/2 cup chocolate chips
  • Handful of unsweetened coconut flakes

Preparation

  1. Preheat oven to 375 degrees F and line a baking tin with parchment paper or grease with some oil.

  2. In a large bowl, mash the bananas (ok to leave some chunks), stir in the rest of the wet ingredients and combine.

  3. In another bowl, add the dry ingredients and pour the dry into the wet ingredients and combine.

  4. Add the blueberries and chocolate chips.

  5. Pour out the batter into the baking tin and sprinkle the unsweetened coconut flakes on top.

  6. Bake for 50 minutes.

  7. Let cool before taking it out of the tin and slicing. Enjoy
