Pb and J Pumpkin Protein Breakfast Blondies

Ingredients

  • 2 bananas (mashed)
  • 1/2 cup pumpkin purée
  • 1 cup oat flour
  • 1/2 cup quick or rolled oats
  • 2 scoops PB cup vegan protein powder
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 cup plant milk

Preparation

  1. Start by mashing the banana in your bowl, mix in the pumpkin, then add the remaining ingredients to create your base

  2. Add the mixture to a square 8x8 baking dish and choose your toppings, such as raspberries, vegan chocolate chunks, and nut butter

  3. Bake for 30 minutes at 350°F

  4. Cut into pieces, eat, and store any extras in the fridge after cooling

Notes

  1. This recipe is vegan, can be made in one bowl, and has about 70 calories per serving with no added sugar. Makes 16 servings.
