Aquafaba Chocolate Mousse
Ingredients
- 1 cup aquafaba, chilled (chickpea brine)
- 2-4 tbsp maple syrup (to taste)
- 1 tsp vanilla paste
- sea salt, to taste
Preparation
Gently melt your dark chocolate in a bain marie, stirring smooth
Remove from the heat, then whisk in the maple syrup (i used 3 tbsp, but it depends on your tastebuds and how dark the chocolate is!), vanilla and salt
Set aside
Beat your aquafaba until stiff peaks form - this took me around ten minutes
Pour the chocolate mixture in around the sides (this helps to prevent the air from being knocked out), then beat once more to combine
Pour into cups or ramekins and place in the fridge overnight to firm up
Serve with fresh fruits, coconut cream and a sprinkling of extra sea salt!
