Brazilian Cream-Filled Doughnuts Made in a Blender

Ingredients

Dough

  • 45g fresh yeast (3 cubes)
  • 2 eggs
  • 1 egg yolk
  • 50g butter
  • 250ml milk
  • a pinch of salt
  • 1/4 cup sugar
  • 5 cups all-purpose flour (approximately)

Filling

  • 500ml milk
  • 3 egg yolks
  • 1 cup sugar
  • 1/2 cup all-purpose flour
  • 2 teaspoons vanilla extract
  • 1 cup sugar for sprinkling

Preparation

Dough

  1. Blend yeast, eggs, egg yolk, butter, milk, salt, and sugar in a blender

  2. Transfer to a bowl and gradually mix in the flour, working the dough until smooth

  3. Cover and let rest for 20 minutes

  4. Shape into small balls and fry in hot oil

Filling

  1. Set aside 1/2 cup of milk

  2. Beat egg yolks with sugar

  3. Add flour and gradually the reserved milk

  4. Heat the remaining milk in a saucepan until boiling

  5. Add the beaten mixture and cook for two minutes without stirring

  6. After two minutes, stir well, remove from heat, and add vanilla

  7. Cut a slit in the doughnuts, fill with the custard, and roll in sugar
