Creamy Carrot Cake Oatmeal

Ingredients

  • 1 medium-sized carrot, grated
  • 50 g (1/2 cup) fine oats
  • 1 tsp chia seeds
  • 1 tbsp raisins
  • 1/2 tsp cinnamon
  • 1/8 tsp cardamom
  • 1 pinch of salt
  • 240 ml (1 cup) plant mylk
  • 120 ml (1/2 cup) water
  • fried apples:
  • 1 apple, sliced
  • coconut oil
  • 2 tsp date syrup

Preparation

  1. Add all oatmeal ingredients to a small saucepan

  2. Bring to a boil and let simmer while stirring frequently until creamy

  3. Add more liquid if necessary

  4. For the fried apples heat coconut oil in a pan

  5. Add apple pieces and fry for 2 min

  6. Add date syrup and cook until apple pieces are slightly soft
