Healthy Overnight Oats with Sautéed Fruit
Ingredients
- 1/2 cup rolled oats
- 1 tbsp chia seeds or ground flax seeds
- 1 tsp sweetener of your choice or 1 mashed medjool date
- Pinch of cardamom
- Pinch of cinnamon
- Pinch of salt
- 1 banana
- 3/4 cup unsweetened plant milk
- 1 apple
- 2 tsp liquid sweetener
- splash of water
- pepitas
- cacao nibs
Preparation
Combine all ingredients together and set overnight in the fridge in a bowl or container.
When ready to serve, add the banana and mash lightly into the oats.
Top with your favorite fruit and eat it.
Fruit topping
Dice up an apple.
Sauté the apple with 2 tsp liquid sweetener, a pinch of cinnamon, and a splash of water over low-medium heat until softened.
Use the sautéed apples to top the oatmeal.
Sprinkle with a little pepitas and cacao nibs for crunch.
