Banana Walnut Oats with Caramelized Banana

Ingredients

  • 1/3 cup rolled oats
  • 1 teaspoon chia seeds
  • 1/4 teaspoon cinnamon
  • Pinch of salt
  • 1 banana
  • 2 tablespoons chopped walnuts, divided
  • 1 cup unsweetened vanilla almond milk
  • 2 teaspoons liquid sweetener

Preparation

  1. Cut banana into coins and set aside.

  2. Add oats, half of the banana coins, 1 tablespoon of the chopped walnuts, chia seeds, cinnamon, milk, and salt.

  3. Bring to a simmer and stir for about 5 minutes until fully thickened.

  4. In a separate sauté pan, add banana and syrup.

  5. Sprinkle a pinch of salt over top and cook on low heat to cook bananas.

  6. Carefully flip to cook both sides evenly for about 2 minutes per side then set aside.

  7. Pour your cooked oatmeal in a bowl and top with bananas and walnuts.

  8. If desired, add some more sweetener, hemp hearts, cacao nibs, and buckwheat overtop.
