Eggy Mayo Butty with Waffle Chips and Salad

Ingredients

  • 70g wholemeal bun
  • 3 eggs (8-minute boiled)
  • 2 tbsp lighter than light mayonnaise
  • 3 tsp butter spread
  • hot rocket
  • 15g grated double Gloucester cheese

Waffle chips

  • Potatoes (quantity not specified)

Salad

  • Rocket mix or similar salad greens

Preparation

  1. Boil the eggs for 8 minutes, then peel and chop them.

  2. Mix the chopped eggs with mayonnaise to create the egg mayo mixture.

  3. Spread butter on the inside of the bun.

  4. Assemble the butty by adding the egg mayo mixture, grated cheese, and rocket to the bun.

  5. Cut potatoes into waffle shapes using a mandolin.

  6. Cook the potato slices in an air fryer until crispy.

  7. Prepare the salad with rocket mix.

  8. Serve the eggy mayo butty alongside the waffle chips and salad.
