Fresh Raspberry Chia Seed Jam
Ingredients
- 3 cups fresh raspberries
- 3 Tbsp pure maple syrup (optional)
- 1 tbsp fresh lime or lemon juice
- 1.5 tbsp chia seeds
- 2 tbsp water
- 1.2 tsp pure vanilla bean paste (optional)
- 1 pinch of sea salt
Preparation
Add the raspberries, pure maple syrup, water, and lemon juice to a small saucepan and bring to a boil
Reduce the heat and continue to lightly simmer for 10 to 15 minutes, until the raspberries have softened
Mash the raspberries using a fork
Add the chia seeds and continue to simmer until thick, about 8 minutes
Allow to cool for 10 minutes then add the pure vanilla extract and sea salt
Transfer to a jar and refrigerate at least 2 hours before using
