Fresh Raspberry Chia Seed Jam

Ingredients

  • 3 cups fresh raspberries
  • 3 Tbsp pure maple syrup (optional)
  • 1 tbsp fresh lime or lemon juice
  • 1.5 tbsp chia seeds
  • 2 tbsp water
  • 1.2 tsp pure vanilla bean paste (optional)
  • 1 pinch of sea salt

Preparation

  1. Add the raspberries, pure maple syrup, water, and lemon juice to a small saucepan and bring to a boil

  2. Reduce the heat and continue to lightly simmer for 10 to 15 minutes, until the raspberries have softened

  3. Mash the raspberries using a fork

  4. Add the chia seeds and continue to simmer until thick, about 8 minutes

  5. Allow to cool for 10 minutes then add the pure vanilla extract and sea salt

  6. Transfer to a jar and refrigerate at least 2 hours before using
