Quick Healthy Strawberry Scones

Ingredients

  • 175g (6 oz or 1.3 cups) self-raising flour (or all-purpose flour plus 1 tsp baking powder)
  • 2 tablespoons any plain or vanilla yogurt
  • 7 tablespoons fizzy water or diet lemonade
  • 5 chopped strawberries
  • 1 teaspoon strawberry jam

Preparation

  1. Preheat oven to 200°C fan/425°F/gas mark 7.

  2. Put all ingredients except strawberries into a bowl and stir with a spoon until the mixture becomes a dough. Fold in the strawberries.

  3. Spoon the mixture onto a baking tray into four round portions.

  4. Flatten the tops and brush with extra yogurt.

  5. Bake in the oven for 12-15 minutes.

  6. Slice, fill, and eat straightaway.

Notes

  1. For a vegan version, use dairy-free yogurt.

  2. For a gluten-free version, use gluten-free flour and add 1/2 teaspoon xanthan gum.
