Soft Italian Three-Chocolate Buns
Ingredients
- 250 g all-purpose flour
- 250 g strong flour or Manitoba
- 100 g water
- 130 g milk
- 3 g dry yeast
- 100 g sugar
- 130 g chocolate mix (milk, white, and dark)
- 1 egg
- 60 g butter
- 8 g salt
For brushing
- 1 egg
- 2 tablespoons milk
Preparation
Prepare the preferment by mixing 100g flour, 100g water, 10g sugar, and dry yeast in a bowl. Cover and let it rise for about 40 minutes.
In a stand mixer, add the remaining flour and sugar, the preferment, milk, and begin mixing with the dough hook.
Add the egg and mix until fully absorbed.
Add soft butter in pieces and continue mixing.
Finally, add the chopped chocolate and salt.
Shape the dough into a ball and place it in a clean, lightly oiled container. Let it rise until doubled in size.
Divide the dough into 50g portions, shape each into a smooth ball, and place them on a baking sheet lined with parchment paper. Let them rise until doubled.
Brush the tops with a mixture of egg and milk, then bake at 180°C for 20-25 minutes.
