Sweet Potato Hash with Vegetables

Ingredients

  • 1 small sweet potato, grated
  • salt and pepper
  • 2 huge handfuls organicgirl spinach, steamed
  • 1/2 avocado, sliced
  • cherry tomatoes, halved
  • violife_foods vegan feta
  • rayfamilyfarmsia microgreens
  • traderjoes EBTB seasoning
  • hot sauce of choice

Preparation

  1. Prepare the spinach by steaming it, slice the avocado, and halve the cherry tomatoes.

  2. Heat 1 tablespoon extra virgin olive oil in a large cast iron skillet over low heat. Add the grated sweet potato in an even layer and press flat with a spatula. Drizzle a small amount of extra virgin olive oil over the top.

  3. Cook for 4-5 minutes until golden and crisp. Flip in sections and repeat on the other side.

  4. Transfer to a plate and top with the remaining ingredients.

Tips

  1. This hash can be topped with scrambled tofu, Just Egg, or a poached egg for non-vegan options.

  2. Add hot sauce, such as Valentina, as a finishing touch for extra flavor.
