Vegan Tofu Scramble with Avocado Toast

Ingredients

  • Cooking spray
  • 1/2 block smoked tofu
  • Nutritional yeast
  • Salt
  • Garlic powder
  • Turmeric
  • Mixed herbs
  • Dash of dark soy sauce
  • Non-dairy milk
  • Rye bread
  • Half an avocado
  • Tomato slices

Preparation

  1. Add cooking spray to a small pot and crumble in 1/2 block of smoked tofu.

  2. Add nutritional yeast, salt, garlic powder, turmeric, mixed herbs, and a dash of dark soy sauce.

  3. Add some non-dairy milk to make it creamy and cook for 6-8 minutes.

  4. Toast a piece of rye bread.

  5. Smash half an avocado on top of the toast.

  6. Add a few slices of tomato.

  7. Top with the tofu scramble.

Smoothie

  1. Blend frozen banana, spinach, protein powder, maca powder, coffee, and non-dairy milk to make a smoothie.
