Vegan Waffles with Chickpea Brine

Ingredients

  • 5 deciliters soy milk
  • 1.5 deciliters chickpea brine
  • 2 teaspoons apple cider vinegar
  • 0.5 deciliter sugar
  • 1 teaspoon baking soda
  • 2 pinches salt
  • 1 pinch vanilla powder
  • 300 grams wheat flour

Optional

  • a little sunflower oil for brushing the waffle iron

Preparation

  1. Whisk together soy milk, chickpea brine, and vinegar in a bowl. Let it stand for a couple of minutes.

  2. Whisk in the remaining ingredients. Taste and add more sugar if desired.

  3. Cook the waffles and enjoy!

Notes

  1. These waffles are made without eggs and milk; chickpea brine serves as an egg substitute due to its properties similar to egg white, stemming from proteins, starch, and saponins.

  2. This recipe yields approximately 7 double waffles.
