Vegan Waffles with Chickpea Brine
Ingredients
- 5 deciliters soy milk
- 1.5 deciliters chickpea brine
- 2 teaspoons apple cider vinegar
- 0.5 deciliter sugar
- 1 teaspoon baking soda
- 2 pinches salt
- 1 pinch vanilla powder
- 300 grams wheat flour
Optional
- a little sunflower oil for brushing the waffle iron
Preparation
Whisk together soy milk, chickpea brine, and vinegar in a bowl. Let it stand for a couple of minutes.
Whisk in the remaining ingredients. Taste and add more sugar if desired.
Cook the waffles and enjoy!
Notes
These waffles are made without eggs and milk; chickpea brine serves as an egg substitute due to its properties similar to egg white, stemming from proteins, starch, and saponins.
This recipe yields approximately 7 double waffles.
