Zucchini Egg Toast Breakfast

Ingredients

  • 1 small zucchini
  • 1 egg
  • pinch of salt
  • 1 slice whole grain bread
  • 1 tablespoon dried dill (or fresh)
  • 1 tablespoon olive oil

Preparation

  1. Grate the zucchini and mix it in a bowl with the salt, then leave it for 5-10 minutes.

  2. Using your hands, strain the water from the zucchini mixture.

  3. Heat a pan and add some olive oil.

  4. Form the grated zucchini into a pancake shape in the pan, not too thick.

  5. Make a small hole in the middle of the zucchini pancake and crack the egg into it.

  6. Add a little bit of salt and the dried dill.

  7. Cook on medium heat for several minutes until golden around the edges.

  8. While the egg is cooking, toast the bread.

  9. Once everything is cooked, place the zucchini egg on top of the toast and serve.

Tips

  1. Zucchinis are full of vitamins and minerals and low in calories.

  2. Feel free to use fresh dill instead of dried.

  3. You can multiply the recipe to make as many toasts as desired.
