Chilled Gingerbread Espresso Martini

Ingredients

  • 1 cup freshly brewed coffee or cold brew (can be made the day before)
  • 1 can of coconut milk
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1 teaspoon vanilla bean paste
  • 120 ml vodka
  • 60 ml coffee liqueur
  • 2 medjool dates
  • Star anise for decorating

Preparation

  1. Pour freshly brewed coffee into ice cube moulds and place them in the freezer for at least 4 hours.

  2. In a small pot, combine coconut milk, cinnamon, ginger, and vanilla. Bring the mixture to a boil over medium heat and simmer, stirring occasionally, for 10 minutes. Remove from heat and let it cool completely.

  3. In a blender, add the coffee ice cubes, vodka, coffee liqueur, dates, and the cooled coconut milk mixture. Blend on high speed until smooth and frothy.

  4. Taste the mixture and adjust the sweetness or strength of the coffee to your liking.

  5. Pour the cocktail into chilled glasses and decorate each with a piece of star anise.
