Easy Vegan Gingerbread Truffles
Ingredients
- 1 1/2 cups rolled oats
- 1 cup medjool dates
- 1 tsp ginger powder
- 1/2 tsp cinnamon powder
- 1 tbsp maple syrup
- 1/2 tbsp water or coconut oil
- 1/4 tsp ground cloves
- 1/2 tsp nutmeg
- 1 cup vegan white chocolate
- Additional cinnamon for garnishing
Preparation
Soak dates in boiling water for about an hour and then drain.
Add all ingredients except the white chocolate to a blender.
Blend until combined; you will have a dough-like consistency.
Scoop 1 tablespoon at a time and roll into balls.
Freeze the balls for approximately 1 hour.
Melt the vegan white chocolate.
Roll the balls in the melted chocolate so they are fully coated.
Sprinkle the cinnamon on top of each one.
Freeze again until the chocolate is solidified.
Store in the fridge until ready to eat.
