Apple and Walnut Baked Oats
Ingredients
- 2.5 cups whole oats
- 2 average sized red apples grated plus a little extra apple to dice into moons for topping (optional)
- 2 tbsp melted coconut oil
- 2 tbsp chia seeds
- 2 tbsp almond meal or flaxseed meal
- 2 tbsp maple syrup
- 1/2 tsp sea salt
- 1 tsp ground cinnamon
- 2 cups coconut or nut milk
- 1 cup chopped walnuts (sub for any nuts)
- 5 Medjool dates chopped small or 1/4 cup raisins
- 3 tbsp peanut butter
- 1 tsp vanilla bean paste or pure vanilla extract
Preparation
Preheat oven to 180 Celsius
Place all dry ingredients in a large bowl and mix evenly. Then add all the remaining ingredients and stir through until mixed well
Let the mixture sit in the bowl for 5 minutes so the chia seeds can coagulate. If it seems a little dry add in a dash more milk or water.
Line a loaf tin with baking paper and pour the mixture, press evenly and into the sides
If you have additional apple moons, layer or overlap over the center or even all over and sprinkle with additional cinnamon.
Bake in preheated oven for 35-45 minutes or until the loaf has come away from the edges of dish and the topping is golden.
Remove from oven and sit for 10 minutes.
Serve warm with warmed nut milk and additional toppings.
