Elegant Embossed Chocolate Cookies
Ingredients
- 2 cups all-purpose flour
- 1/2 cup cold unsalted butter (1 stick), cut into small cubes
- 1 tbsp coconut oil
- 2/3 or 1/4 cup cane sugar
- 1 tsp vanilla extract
- 1/2 tsp sea salt
- 1 large egg
- 1/4 cup cornstarch
- 1/2 cup cacao powder
Preparation
Whisk wet ingredients (except eggs) inside a large bowl (or stand mixer bowl)
Cream them until you get a smooth texture
Don’t overbeat!)
Combine egg into the batter
Sift the dry ingredients (only 1 1/4 cup flour) before adding them to the batter
Continue adding more flour until the cookie dough forms
It should not stick to the sides of the bowl
Preheat oven to 375°f and line baking sheets with parchment paper
Roll the dough between two sheets of parchment paper
Thickness 3/8 inches)
Use stamp cookie or cookie cutter to make shapes out of the cookie dough
Bake for 9-12 minutes (or until your cookies look firm and dry)
Let it cool on a wire rack
