Fruit and Nut Chocolate Coins

Ingredients

  • 6 oz dark chocolate, chopped or chips
  • 6 dried apricots, sliced into small strips
  • 2 tbsp dried cranberries
  • 2 tbsp raw pistachio halves
  • 2 tbsp pecan pieces

Preparation

  1. Melt chocolate in microwave for 30 seconds

  2. Remove from microwave and stir

  3. Repeat until mostly melted

  4. Stir until smooth

  5. Fill a small spoon with melted chocolate, (scraping the bottom of the spoon against the bowl to clean it) and drizzle it onto the tray, forming a disc shape

  6. Repeat with half the chocolate

  7. Press in fruit and nuts, working quickly before chocolate hardens

  8. Repeat with remaining chocolate and fruit and nuts

  9. Let cool/firm up and serve
