Simple Vegan Pink Tart

Ingredients

Crust

  • 1 cup oats
  • 3 tbsp cacao powder
  • 1 tbsp nut butter
  • 1 tbsp coconut oil
  • 20 pitted dates
  • 5 dried figs
  • 3 tablespoons water
  • vanilla powder
  • cinnamon

Filling

  • 1 1/2 cups coconut milk
  • 3 tbsp agave syrup or other sweetener
  • 1 package fruit powder (raspberry)
  • 1 teaspoon gingerblast powder (optional)
  • 1 tbsp tapioca starch or more
  • 2 tbsp agar agar

Preparation

  1. Blend all ingredients for the crust in a high speed blender.

  2. Press it into a 28cm round mould.

  3. Then place it in the fridge.

  4. Pour the coconut milk in a saucepan and bring it to a simmer.

  5. Mix sweetener and fruit powder and simmer it for about 5 minutes again.

  6. Mix it well.

  7. Now add tapioca starch and agar agar, cook it again for a few minutes.

  8. Let it cool down.

  9. Put the lukewarm mixture on the crust and let it sit in the fridge.

  10. For serving, decorate it with whatever you like.
