Chicken and Brussels Sprout Skillet Dinner
Ingredients
- 1 tsp olive oil
- 1/2 diced onion
- 1 lb Brussels sprouts
- 1 tsp garlic
- 1/2 tsp sea salt
- 1 chicken breast
- 1/4 cup coconut aminos
- 1/4 cup chicken bone broth
Preparation
Heat a skillet over medium heat
Add 1 tsp olive oil
Add 1/2 diced onion
Sauté for 3 minutes
Add 1 lb Brussels sprouts that have been cut in half or thirds
Sprinkle 1 tsp garlic and 1/2 tsp sea salt on top
Mix the spices in and cook the Brussels sprouts for about 5 minutes, until they’re a little browned
Cut 1 chicken breast into small cubes
Add the chicken breast and sauté for 5 more minutes
Reduce heat and add 1/4 cup coconut aminos and 1/4 cup chicken bone broth
Mix everything together, cover with a lid, and let simmer for 5 minutes
Check the internal temperature of the biggest piece of chicken to make sure it’s done
Serve with cauliflower rice or rice
