Chicken and Brussels Sprout Skillet Dinner

Ingredients

  • 1 tsp olive oil
  • 1/2 diced onion
  • 1 lb Brussels sprouts
  • 1 tsp garlic
  • 1/2 tsp sea salt
  • 1 chicken breast
  • 1/4 cup coconut aminos
  • 1/4 cup chicken bone broth

Preparation

  1. Heat a skillet over medium heat

  2. Add 1 tsp olive oil

  3. Add 1/2 diced onion

  4. Sauté for 3 minutes

  5. Add 1 lb Brussels sprouts that have been cut in half or thirds

  6. Sprinkle 1 tsp garlic and 1/2 tsp sea salt on top

  7. Mix the spices in and cook the Brussels sprouts for about 5 minutes, until they’re a little browned

  8. Cut 1 chicken breast into small cubes

  9. Add the chicken breast and sauté for 5 more minutes

  10. Reduce heat and add 1/4 cup coconut aminos and 1/4 cup chicken bone broth

  11. Mix everything together, cover with a lid, and let simmer for 5 minutes

  12. Check the internal temperature of the biggest piece of chicken to make sure it’s done

  13. Serve with cauliflower rice or rice
