Chicken Shawarma Stir Fry

Ingredients

  • 700g chicken strips (breast/thigh)_
  • 2 tbsp yoghurt (natural or greek)_
  • 3/4 tsp salt (or to taste)_
  • 1 tsp garlic powder
  • 2/3 tsp cumin powder
  • 2/3 tsp coriander powder
  • 1/2 tsp ground black pepper
  • 1/2 tsp paprika
  • 1/2 tsp chilli powder
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground cinnamon
  • 1 tsp english mustard (optional)
  • 1 tbsp oil
  • 1 diced onion
  • 300g mushrooms, thickly sliced
  • 1 red bell pepper, sliced
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1 tbsp ketchup
  • 1 tbsp sriracha

Preparation

  1. Marinate the chicken strips using the spices above

  2. Fry off the strips in a little oil in batches and reserve to one side

  3. Add the diced onion to the same pan (add extra oil if needed), followed by the mushrooms, bell pepper, black pepper, paprika, ketchup and sriracha

  4. Add extra salt if needed

  5. Cook over a high heat till the mushrooms and pepper are almost cooked

  6. Add back the cooked chicken pieces and fry for a further 2 - 3 mins

  7. Serve in wraps, buns or pita with salad, grated cheese and sauces of your choice

  8. Enjoy!
