Vegan Breakfast Tacos with Just Egg

Ingredients

  • 1/4 small red onion, finely diced
  • Handful of spinach
  • 1/4 cup Just Egg
  • Pinch of black lava salt or regular salt
  • 1/4 teaspoon paprika
  • Almond flour tacos
  • Black beans
  • Vegan cheddar shreds
  • Cherry tomatoes, halved
  • Avocado slices
  • Cilantro
  • Hot sauce of choice
  • 1 teaspoon extra virgin olive oil

Preparation

  1. Heat 1 teaspoon extra virgin olive oil in a large cast iron skillet over medium heat. Sauté onion until tender. Add spinach and cook until wilted. Season with black lava salt or paprika.

  2. Shake the Just Egg bottle and pour it in. Scramble just like you would eggs.

  3. Warm the tortillas for 30 seconds per side.

  4. Fill the tortillas with warmed black beans, vegan cheddar shreds, cherry tomatoes, avocado slices, cilantro, and hot sauce.
