Young Coconut and Shiitake Mushroom Soup
Ingredients
- 1 Young Coconut
- 2 cups veg stock
- 1/2 tsp salt
- 1/2 tsp sugar
- 1.5 tbs light soy sauce
- 6 baby corn
- 3 fresh shiitake mushrooms
- 2 spring onions
- 1 tbs coriander leaves
- pinch white pepper
Preparation
Open the young coconut, strain the coconut water, and set aside. Remove the coconut flesh with a spoon and set aside.
In a pan, bring the vegetable stock to a boil. Add salt, sugar, and light soy sauce, and mix well.
Add the shiitake mushrooms, baby corn, and spring onions, then simmer for 1 minute.
Turn off the heat and add half of the coconut juice and flesh.
Garnish with coriander leaves and a pinch of white pepper.
