Young Coconut and Shiitake Mushroom Soup

Ingredients

  • 1 Young Coconut
  • 2 cups veg stock
  • 1/2 tsp salt
  • 1/2 tsp sugar
  • 1.5 tbs light soy sauce
  • 6 baby corn
  • 3 fresh shiitake mushrooms
  • 2 spring onions
  • 1 tbs coriander leaves
  • pinch white pepper

Preparation

  1. Open the young coconut, strain the coconut water, and set aside. Remove the coconut flesh with a spoon and set aside.

  2. In a pan, bring the vegetable stock to a boil. Add salt, sugar, and light soy sauce, and mix well.

  3. Add the shiitake mushrooms, baby corn, and spring onions, then simmer for 1 minute.

  4. Turn off the heat and add half of the coconut juice and flesh.

  5. Garnish with coriander leaves and a pinch of white pepper.
