Creamy Broccoli Cheese Soup
Ingredients
- 2 tablespoons butter
- 1 large chopped onion
- 4 cloves crushed garlic
- 3 tablespoons flour
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon turmeric
- 6 cups chicken broth
- 2 cups milk
- 2 medium potatoes
- 1 large carrot
- 1 stalk celery
- 1 cup peas
- 2 medium broccoli heads
- 2 cups cheddar cheese
Preparation
Melt butter in a pot over medium heat
Add chopped onion and crushed garlic, sauté until softened
Stir in flour, salt, black pepper, and turmeric to form a roux, cook for a minute
Gradually add chicken broth and milk, stirring to combine
Add potatoes, carrot, celery, peas, and broccoli, bring to a boil
Reduce heat and simmer until vegetables are tender, about 15-20 minutes
Stir in cheddar cheese until melted and smooth, then serve
