Creamy Broccoli Cheese Soup

Ingredients

  • 2 tablespoons butter
  • 1 large chopped onion
  • 4 cloves crushed garlic
  • 3 tablespoons flour
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon turmeric
  • 6 cups chicken broth
  • 2 cups milk
  • 2 medium potatoes
  • 1 large carrot
  • 1 stalk celery
  • 1 cup peas
  • 2 medium broccoli heads
  • 2 cups cheddar cheese

Preparation

  1. Melt butter in a pot over medium heat

  2. Add chopped onion and crushed garlic, sauté until softened

  3. Stir in flour, salt, black pepper, and turmeric to form a roux, cook for a minute

  4. Gradually add chicken broth and milk, stirring to combine

  5. Add potatoes, carrot, celery, peas, and broccoli, bring to a boil

  6. Reduce heat and simmer until vegetables are tender, about 15-20 minutes

  7. Stir in cheddar cheese until melted and smooth, then serve
