Healthy Sweetcorn Soup Without Cornflour

Ingredients

  • 2 sweet corns
  • Chopped ginger
  • Chopped garlic
  • Chopped onion
  • Chopped celery (optional)
  • 1 teaspoon butter
  • Salt
  • Black pepper
  • Water
  • Chopped carrot
  • Fresh coriander
  • Optional additional vegetables

Preparation

  1. Take two sweet corns; cut one into two pieces and set aside, then remove the kernels from the other corn.

  2. In a pressure cooker, sauté the chopped ginger, garlic, onion, and optional celery in 1 teaspoon butter.

  3. Add salt, black pepper, the removed corn kernels, and some water to the pressure cooker.

  4. Add the whole sweet corn pieces and cook until 2 whistles.

  5. Open the cooker, remove and set aside the whole corn.

  6. Puree the remaining mixture in a blender to make a smooth puree.

  7. Transfer the puree to a pan, add water to adjust consistency, and bring to a boil.

  8. Once the soup is boiling, add the kernels from the boiled whole corn, chopped carrot, and fresh coriander, and include more vegetables if desired.

  9. Serve and enjoy.

Tips

  1. This soup is typically made with cornflour, but this version omits it for a healthier alternative.

  2. You can customize the recipe by adding more vegetables as preferred.
