Easy Vegan Chili for Meal Prep
Ingredients
- 1 diced yellow onion
- 3 cloves of garlic
- 2 stalks of celery, diced
- 2 large carrots, diced
- 1 sweet potato, diced
- 2 cans of diced tomato
- 1 small can of tomato paste
- 1 can of chickpeas (drained and rinsed)
- 1 can of black beans (drained and rinsed)
- 1 cup of veggie broth
- 2.5 tbsp chili powder
- 1/2 tbsp cumin
- 1/2 tbsp smoked paprika
- 1 tsp chili flakes

Sauté 1 diced yellow onion and 3 cloves of garlic in the pressure cooker until translucent.
Add 2 stalks of celery, diced, 2 large carrots, diced, 1 sweet potato, diced, 2 cans of diced tomato, 1 small can of tomato paste, 1 can of chickpeas (drained and rinsed), 1 can of black beans (drained and rinsed), 1 cup of veggie broth, 2.5 tbsp chili powder, 1/2 tbsp cumin, 1/2 tbsp smoked paprika, and 1 tsp chili flakes.
Add the lid and cook on high heat for 10 minutes.
