Easy Vegan Chili for Meal Prep

Ingredients

  • 1 diced yellow onion
  • 3 cloves of garlic
  • 2 stalks of celery, diced
  • 2 large carrots, diced
  • 1 sweet potato, diced
  • 2 cans of diced tomato
  • 1 small can of tomato paste
  • 1 can of chickpeas (drained and rinsed)
  • 1 can of black beans (drained and rinsed)
  • 1 cup of veggie broth
  • 2.5 tbsp chili powder
  • 1/2 tbsp cumin
  • 1/2 tbsp smoked paprika
  • 1 tsp chili flakes

Preparation

  2. Sauté 1 diced yellow onion and 3 cloves of garlic in the pressure cooker until translucent.

  3. Add 2 stalks of celery, diced, 2 large carrots, diced, 1 sweet potato, diced, 2 cans of diced tomato, 1 small can of tomato paste, 1 can of chickpeas (drained and rinsed), 1 can of black beans (drained and rinsed), 1 cup of veggie broth, 2.5 tbsp chili powder, 1/2 tbsp cumin, 1/2 tbsp smoked paprika, and 1 tsp chili flakes.

  4. Add the lid and cook on high heat for 10 minutes.
