Garlic Veggie Rotini Pasta

Ingredients

  • 2 tablespoons oil
  • 2 cups mushrooms (150 g), sliced
  • 2 cups broccoli (500 g), chopped
  • 4 cloves garlic, chopped
  • 2 bell peppers, sliced
  • 1 tablespoon dried oregano
  • 2 teaspoons salt
  • 2 teaspoons pepper
  • 1 1/4 cups rotini pasta (250 g)

Preparation

  1. Cook the rotini pasta in boiling water according to package instructions until al dente, then drain.

  2. Heat oil in a large skillet or pot over medium heat.

  3. Add garlic and sauté for 1-2 minutes until fragrant.

  4. Add mushrooms, broccoli, and bell peppers; cook for 5-7 minutes until vegetables are tender-crisp.

  5. Stir in dried oregano, salt, and pepper, mixing well to combine.

  6. Add the cooked pasta to the skillet and toss everything together until heated through.

  7. Serve immediately.
