Garlic Veggie Rotini Pasta
Ingredients
- 2 tablespoons oil
- 2 cups mushrooms (150 g), sliced
- 2 cups broccoli (500 g), chopped
- 4 cloves garlic, chopped
- 2 bell peppers, sliced
- 1 tablespoon dried oregano
- 2 teaspoons salt
- 2 teaspoons pepper
- 1 1/4 cups rotini pasta (250 g)
Preparation
Cook the rotini pasta in boiling water according to package instructions until al dente, then drain.
Heat oil in a large skillet or pot over medium heat.
Add garlic and sauté for 1-2 minutes until fragrant.
Add mushrooms, broccoli, and bell peppers; cook for 5-7 minutes until vegetables are tender-crisp.
Stir in dried oregano, salt, and pepper, mixing well to combine.
Add the cooked pasta to the skillet and toss everything together until heated through.
Serve immediately.
