Smoky Vegan Pulled Jackfruit and Beans

Ingredients

  • 300g Mixed Beans in Tomato Sauce
  • 150g Onions
  • 200g Mushrooms
  • 200g Celery
  • 200g Peppers
  • 200g Aubergine
  • 200g Jackfruit (canned)
  • 1 tsp Smoked Paprika
  • 1/2 tsp Garlic
  • 50g Coconut Yogurt
  • Spray oil

Preparation

  1. Finely chop all of your vegetables and brown them in a pan with some spray oil.

  2. Drain and pull the jackfruit, then add it to the vegetables.

  3. Add smoked paprika and garlic, stir, and then add the beans.

  4. Bring to a gentle simmer for 15-20 minutes, then serve.

  5. Dollop coconut yogurt on top and stir through.

Tips

  1. Optionally, add slices of vegan garlic pizza bread for an extra treat.

  2. Don't restrict, rethink your meals to enjoy new flavors.
