Vanilla Cake with Chocolate Buttercream Layers

Ingredients

Cake

  • 1 3/4 cup cake flour (can easily be made with gf flour)
  • 3/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter room temp
  • 1 cup sugar
  • 3 egg whites room temp
  • 2 tsp vanilla
  • 1/2 cup sour cream room temp
  • 1/2 cup whole milk room temp

Chocolate buttercream

  • 1 cup unsalted butter room temp
  • 3 1/2 cups confectioners sugar
  • 1/2 cup coco powder
  • 3 tbsp milk
  • 2 tsp vanilla
  • salt

Preparation

  1. Preheat oven to 350 degrees.

  2. Whisk together flour, baking powder, baking soda, and salt; set aside.

  3. Beat butter and sugar on high speed.

  4. Add egg whites and vanilla; beat on high speed.

  5. Add sour cream and beat on high speed.

  6. Add dry ingredients until just combined.

  7. Slowly pour in milk.

  8. Prepare 6-inch pans, divide batter into three layers.

  9. Bake for 20-22 minutes or until a cake tester comes out clean.

  10. Allow to cool, then frost with chocolate buttercream and add berries and sprinkle on top.
