Vegan Cheesy Broccoli Pasta
Ingredients
Broccoli
- 1 head broccoli – cut into small florets
- salt and pepper to taste
Sauce
- 1 cup diced sweet potato
- 1 cup diced carrots
- 1/2 cup plant milk
- 1/4 cup nutritional yeast
- 1/2 tbsp soy sauce or aminos
- 1 tbsp apple cider vinegar
- 3 tbsp tahini
- 1 tsp garlic powder
- 1/2 tsp paprika
- salt and pepper to taste
Pasta
- 1 box cooked pasta of choice, recommended macaroni
Preparation
Cook the pasta according to package instructions.
Bring water to a boil and add carrots and sweet potatoes; boil for 10 minutes.
Add broccoli to a skillet with oil over medium heat and cook for 10 minutes or until broccoli starts to soften; cover the pan for the last minute or so to cook through and set aside.
Add the cooked carrots and sweet potatoes to a blender along with the remaining sauce ingredients and blend until smooth.
Mix the sauce with the cooked pasta and broccoli.
