Vegan Cheesy Broccoli Pasta

Ingredients

Broccoli

  • 1 head broccoli – cut into small florets
  • salt and pepper to taste

Sauce

  • 1 cup diced sweet potato
  • 1 cup diced carrots
  • 1/2 cup plant milk
  • 1/4 cup nutritional yeast
  • 1/2 tbsp soy sauce or aminos
  • 1 tbsp apple cider vinegar
  • 3 tbsp tahini
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • salt and pepper to taste

Pasta

  • 1 box cooked pasta of choice, recommended macaroni

Preparation

  1. Cook the pasta according to package instructions.

  2. Bring water to a boil and add carrots and sweet potatoes; boil for 10 minutes.

  3. Add broccoli to a skillet with oil over medium heat and cook for 10 minutes or until broccoli starts to soften; cover the pan for the last minute or so to cook through and set aside.

  4. Add the cooked carrots and sweet potatoes to a blender along with the remaining sauce ingredients and blend until smooth.

  5. Mix the sauce with the cooked pasta and broccoli.
