Vegan Lentil Sloppy Fries

Ingredients

  • 1 cup dried French green lentils
  • 1 tablespoon non-dairy butter
  • 1 tablespoon neutral oil
  • 1 medium red bell pepper
  • 1 medium yellow onion
  • 3 cloves garlic
  • 2 tablespoons tomato paste
  • 1/4 cup ketchup
  • 8 ounces tomato sauce
  • 1/2 to 1 cup water
  • 1 tablespoon organic brown sugar
  • 2 teaspoons chili powder
  • Worcestershire sauce
  • 1/4 teaspoon red pepper flakes
  • Kosher salt
  • Black pepper

Preparation

  1. Cook lentils like pasta in plenty of salted water, bring to a boil, and simmer until tender, 20 to 30 minutes, then drain and set aside.

  2. On the stovetop over medium heat in a large Dutch oven or pot, melt butter and heat oil; when hot, add pepper and onion and cook for 3 to 5 minutes until soft.

  3. Add garlic and tomato paste, cook stirring until paste caramelizes and turns a deep red, 2 to 3 minutes, then mix in lentils to coat.

  4. Add the remaining ingredients and 1/2 to 1 cup water, scrape up any brown bits from the bottom of the pot, bring to a boil, then simmer for 15 to 20 minutes for flavors to meld and sauce to thicken.

Serving ideas

  1. Devour on a bun with your favorite toppings or load it on some nachos, potatoes, or fries.
