Vegan Lentil Sloppy Fries
Ingredients
- 1 cup dried French green lentils
- 1 tablespoon non-dairy butter
- 1 tablespoon neutral oil
- 1 medium red bell pepper
- 1 medium yellow onion
- 3 cloves garlic
- 2 tablespoons tomato paste
- 1/4 cup ketchup
- 8 ounces tomato sauce
- 1/2 to 1 cup water
- 1 tablespoon organic brown sugar
- 2 teaspoons chili powder
- Worcestershire sauce
- 1/4 teaspoon red pepper flakes
- Kosher salt
- Black pepper
Preparation
Cook lentils like pasta in plenty of salted water, bring to a boil, and simmer until tender, 20 to 30 minutes, then drain and set aside.
On the stovetop over medium heat in a large Dutch oven or pot, melt butter and heat oil; when hot, add pepper and onion and cook for 3 to 5 minutes until soft.
Add garlic and tomato paste, cook stirring until paste caramelizes and turns a deep red, 2 to 3 minutes, then mix in lentils to coat.
Add the remaining ingredients and 1/2 to 1 cup water, scrape up any brown bits from the bottom of the pot, bring to a boil, then simmer for 15 to 20 minutes for flavors to meld and sauce to thicken.
Serving ideas
Devour on a bun with your favorite toppings or load it on some nachos, potatoes, or fries.
